Let's see the kids at Gridskipper missed Steak and Egg (a PATHETIC oversight), Florida Avenue Grill (which you mentioned), Open City, Am City Diner, Annie's, El Tamarindo, Bistro Francais, Mon Cheri Cafe, way too many kabob houses to mention (Moby Dick, Prince Cafe -- 5 locations, DC Cafe, George's Townhouse, whatever replaced Fast Fatoosh, the 24 HR whatever at 14th and U, etc, etc.), about 35 Benny's, Danny's and Good Danny's around town (to be fair the safety and "quality" do vary), Denny's (on Benning Road NE -- surprisingly safe and surprisingly good for a 24 hr joint in that part of town an area which, by the way, will soon be home to another 24 hr hangout called IHOP), Horace and Dickies, the Johnny Rockets in G'town (open 'til 5 am where, don't laugh, they whip up a damn good late night milkshake!), the Philadelphia Cheesesteak place in G'town, the half dozen or so Italian ice places that have popped up lately on H Street NE, Georgia Ave and 14th Street in CH, and about ten Ethiopian places I can't begin to name scattered between Adams Morgan, U Street and 9th Street. Oh and for the cheap slobs out there, it seems that half of the McDonald's in DC have gone 24 hrs -- Yipee!
I didn't feel like registering to sign in at Gridskipper, but I'd like to point out that Five Guys is actually not late night eats. They close woefully early on the weekends, 11 or 12, I think.
Actually, the Five Guys in G'town is open 'til 3 am on weekdays and 4 am on weekends... You maybe thinking of one of their othe DC spots (Dupont?)
A few other options -- Anna Maria's in Dupont, Bar Louie in Gallery Place (they serve food 'til close which I think is 2 am most nights) and the Starbucks at 7th and H is now 24 hrs -- who wouldn't want chain coffee at 4 am!
You are correct; I am thinking of the other locations. I did not know that the Georgetown location is open late because I avoid Georgetown at all costs on weekend nights.

It's called "mumble sauce" for a reason: you end up mumbling to yourself as you waddle back to your car to change your drawers.
Also don't forget that new place called Hudson -- which may or may not be open yet -- at 21st and M. It will be a Diner/Open Cityesque kinda place -- in other words, a breakfast, lunch, dinner virtually 24 hr spot. Also I don't know if Soho Tea and Coffee counts at 22nd and P -- they are open 'til 5 am I believe (they re-open at 7 am so I think that they only close the space to spit shine the bathroom -- or something like that!)

"Mambo," "mumbo," and "mumble" sauce are all Chinese carryout-specific monikers for the same cough-syrupy red sauce they serve with fried chicken wings. Depends entirely on which shop you're at, but I'm pretty sure Yum's at 14th and P NW was ground zero for the phenomena. I even recall seeing "mumsbow" sauce somewhere, but I was probably high.
The kitchen is open as long as the bar is open at Stoney's, which has earned it a special place in my heart forever.
