<description>&lt;p&gt;On the fly-- yes you are right, and I should have mentioned that.  Your carnitas taste authentic, but the (tasty) chicken, well-- not really (but they are good!).  I&apos;m from central/south Mexico so we use corn tortillas and that is what I am used to.    &lt;/p&gt;</description>

<description>&lt;p&gt;ag is partially right.  We wanted to be as authentic as possible with the tacos, but also make them as &quot;street eatable&quot; as possible, thus the flour tortillas, which you do find more in northern Mexico. They don&apos;t fall apart and make a mess which is why we settled on them (we orginally planned on corn).  

I actually went to Mexico twice this year to sample tacos.  The carnitas is meant to be pretty authentic.  The chicken estofado is unique and is a creation from our chef that I think complements the carnitas and is a lot richer and spicier.  The veggie is actually my favorite and I think goes a step beyond what you can typically get in Mexico, more Californian. Cabbage and lime is of course a mexican standard on all tacos.  I am curious how many people out there would like to see fish tacos?

I went hoping to find tacos like the ones from back home- but nope!  The empandas are good and the tacos are tasty, but they are not authenic (imho).  I&apos;m better off with the taco trucks in Langley Park.&lt;/p&gt;</description>
