Mmm, tried the tacos at the National Arboretum plant sale. Got the chicken and the pork (preferred the latter but both hit the spot). Wish there were corn tortillas but life goes on. Would love to see fish tacos!

ces 12, have you tried the fish tacos at Taqueria Nacionale? They didn't quite take me back to Baja, but they were pretty tasty.

On the fly-- yes you are right, and I should have mentioned that. Your carnitas taste authentic, but the (tasty) chicken, well-- not really (but they are good!). I'm from central/south Mexico so we use corn tortillas and that is what I am used to.

Iberian ham is the s**t, I s**t you not. it has the richness and mouth feel of prosciutto with the warm toasty nuttiness of sweetbreads. ridiculously expensive and worth every penny. If you're willing to pay top dollar for dry aged steak, dont think twice about doing iberian ham. So good, you'll smack yo mama.

ag is partially right. We wanted to be as authentic as possible with the tacos, but also make them as "street eatable" as possible, thus the flour tortillas, which you do find more in northern Mexico. They don't fall apart and make a mess which is why we settled on them (we orginally planned on corn). I actually went to Mexico twice this year to sample tacos. The carnitas is meant to be pretty authentic. The chicken estofado is unique and is a creation from our chef that I think complements the carnitas and is a lot richer and spicier. The veggie is actually my favorite and I think goes a step beyond what you can typically get in Mexico, more Californian. Cabbage and lime is of course a mexican standard on all tacos. I am curious how many people out there would like to see fish tacos? Anyway, keep the feedback coming, positive and negative. We want to create something that our fellow DC residents love. On the fly is not mexican food- puullease! I went hoping to find tacos like the ones from back home- but nope! The empandas are good and the tacos are tasty, but they are not authenic (imho). I'm better off with the taco trucks in Langley Park.
