monkey, I have to disagree. The key to tender pancakes (and well-behaved children) is to beat them just enough. Too much beating will result in rubbery pancakes, or children who torture small animals, and kill sorority girls when they grow up.

I can vouch for that kid statement. Kids are like pancakes. You gotta beat them until they rise. Then, you beat them some more. Only then do they become light and fluffy. It's more about technique than ingredients. Of course, eventually they learn to resent you, even though it's for their own good and you're only doing what it says in the book. But no matter how hard you practice, you never seem to be getting anywhere. Then they grow up to be just as stale and tasteless as you. So no matter how much syrup you coat things with, you're stuck with a nasty batch that no amount of effort can improve. And that goes double for waffles.
