<description>&lt;p&gt;moose is fantastic. i have a roast in my freezer right now, no lie. it&apos;s lean, with a rich flavor that makes beef (especially the supermarket beef we&apos;ve been raised on) taste like cardboard. it&apos;s not overwhelmingly gamey, just has a nice layered flavor. and when seared rare (it&apos;s so lean it&apos;s easy to overcook), the texture is chewy without being tough. yum! i much prefer it to elk or caribou (the only other really big game i&apos;ve had).

oh, and it makes wonderful chili.&lt;/p&gt;</description>
