Memories of rolling up to a shack and grabbing a lobster roll — a buttered hot dog bun with chunks of lobster meat, mixed with mayo or drawn butter — are classically associated with trips to New England. Even McDonald’s feels the need to have the iconic item on the menu at its Maine locations. But the strength of the lobster roll comes from its simplicity, which makes the dish’s universally appealing. The large chunks of meat and light dressing enhance the existing briny perfection with the roll making it portable and less messy.
Several months ago, the New York-based Red Hook Lobster Pound decided to take advantage of the relatively lax food truck laws in D.C. and open their first truck in the District on August 13.
