We’ve frequently called the end of cupcakes. But we might just to make an exception in the case of the pork cupcake. Yes, you read that right, pork cupcake. No this isn’t some confection with candied bacon and larded batter. Maybe more akin to a savory muffin, the pork cupcake at Bourbon Steak’s bar is a cheddar bay biscuit filled with pulled pork.
New Bourbon Steak Chef Adam Sobel was inspired by what can only be described as the best part of eating at Red Lobster – the biscuits. The Red Lobster biscuit dough is studded with cheddar, and then brushed with salted butter flavored with garlic powder, and parsley flakes.
Sobel’s version is studded with scallions and filled with melt-in-your mouth pulled pork. This little pork heavy snack is a natural addition to a menu that was previously helmed by Chef David Varley, former King of Porc. We’re certainly curious to see what other little treats he will add.
