Chocolate chip cookies are a classic treat that everyone loves. The problem is that when it comes to a perfect chocolate chip cookie, people tend to fall in to factions. Some folks love a crunchy or crisp cookie. Some love an ooey gooey, barely cooked center, while others fall somewhere in between with crisp edges and a soft center. And so they fall, all along the spectrum.
I tend to fall in with the group that prefers soft, but cooked centers with crisp edges, such as the oatmeal chocolate chip cookies at Potbelly’s. Or I go for the thin, crisp Otterbein’s. Served with whole or chocolate milk, the chocolate chip cookies at Ripple somehow manage to give you the absolute best of both worlds. The ooey gooey centers are cooked just enough to remove the rawness, while the edges are firm with a hint of crispness. Warm out of the oven, they aren’t overly sweet. Not to mention the large chunks of chocolate are wonderfully melty, and there’s enough salt in the dough to provide contrast.

The D.C. State Fair is hosting a bake sale to raise money for this year’s event. If you’re at the Dupont FRESHFARM market, pop by Zorba’s Cafe from 8:30-11 a.m. to pick up some baked goods.
