I love spice. Sometimes to the point where it’s painful. And that’s where Spanish padron peppers are fun. Their consumption is often compared to playing Russian roulette with peppers. Most padrons are mild with limited to no heat, and a slight sweetness. However, every now and then you will get a spicy one — though they’re no habanero. Padrons require cross-pollination with jalapenos to bear fruit, which accounts for the occasional tongue tingler.
The peppers, approximately the size of a jalapeno, are typically sauteed or grilled with olive oil until they start to blister and then sprinkled with sea salt. The season for padrons is relatively short, so get them while you can at Estadio (a steal at $6) alongside a coconut, lemongrass, lime and rum slushito or order them online from La Tienda to trick your friends at home.
