Those mourning the loss of South East Asian fast casual spot ShopHouse, which closed for good on March 17, won’t have to walk by empty storefronts for too long.
Bibibop Asian Grill is acquiring all 15 leases, including eight in D.C. and Maryland, reports Nation’s Restaurant News.
“We’ve got BIG news,” the small restaurant chain wrote in a Facebook post. “We’re spreading our wings and growing outside of our native Ohio!”
Bibibop Asian Grill is owned by Ohio-based Gosh Enterprises, which also has Charleys Philly Steaks under its umbrella. The Korean-inspired fast casual restaurant says it is all about promoting “Well B-Ing” through its take on bibimbap.
Much like ShopHouse (and also Rice Bar), Bibibop offers an assembly-line for customers to specialize their orders. Folks can choose between a bowl, salad, or roll, with bases like bean sprouts, sautéed potatoes, and black beans. From there, Bibibop offers different proteins, sauces, and toppings.
The acquisition of ShopHouse leases means that Bibibop will more than double its footprint, and company leaders say transitioning the spaces will be straightforward. “Their locations lay out nicely for our concepts,” Jonathan Quinn, Gosh Enterprises’ vice president of marketing, told National Restaurant News. “The back-of-house is similar. It’s more of a refresh and a rebrand, putting our menu in there.” The stores are slated to open in early summer.
ShopHouse, a concept from Chipotle, opened its first location in Dupont in September 2011. Chipotle’s CEO said the company was giving up on the concept in October 2016 to focus on pizza and pasta, though for months the locations remained open.
