Dreamed up by the team behind All Souls Bar, this pizza joint serves seasonal pies with local ingredients, along with classics like cheese and pepperoni.
Taking its name from the Latin word “pinsere,” meaning “to crush,” pinsa dough is pressed flat using one’s fingers.
“There’s a lot of competition, a lot of great chefs,” in pizza these days, says chef-owner Juan Olivera. “Normal doesn’t cut it anymore.”
