Two local eateries found their way on to the Food Network’s primetime lineup Monday night. The Devil-Ish Eggs at Founding Farmers were singled out on The Best Thing I Ever Ate, while Diners, Drive-ins and Dives stumbled upon pork pupusas and chicken tamales at Tortilla Café adjacent to Eastern Market.

After tuning in, we can’t help but wonder what makes a dish good enough to get the Food Network’s nod of approval. Did they sample Acadiana’s trio of deviled eggs with ravigote, caviar, and cheddar cheese bacon? Or the Uova alla Diavola DCist encountered at Dino last month topped with sriracha anchovy aioli and anchovy salsa verde? Did they test out the loroco pupusas at Gloria’s Pupuseria in Columbia Heights or Irene’s or Dona Azucena’s in Silver Spring before rolling the cameras at Tortilla Café?

The Best Thing I Ever Ate is a show where Food Network personalities tell their audience where they’ve sampled great dishes — this episode was dedicated to “reinvented classics.” And Robert Irvine, some British chef some foodies would barely recognize who has hosted some shows on the network, really liked the deviled eggs he had one day at Founding Farmers. “Eggs have never been so good. A Belisha Beacon,” he proclaimed. According to Wikipedia, they are the flashing lamps on top of zebra striped poles that help British people cross the street. That must mean these eggs are pretty awesome!
