Edan MacQuaid, whose impressive pizza-making resume includes 2 Amys, Red Rocks, Pizzeria Orso and Local 16, is now set to open a pizza place at 1832 14th Street NW in partnership with one of the owners of Local 16, Aman Ayoubi.
He’s best known for his well-executed and strict adherence to Italy’s Denominazione di Origine Controllata guidelines for pizza, which include specific oven, ingredient and technique requirements.
According to Don Rockwell, who has all the details (minus a name):
Food wise, the menu is forming as 4-5 pizze, and a small menu of constantly changing items. They are hoping to have the oven built on site (3rd floor) by Napolitan builders, and are also discussing the possibility of a wood grill.
With this partnership, we’re glad to see MacQuaid put down some roots, as he has developed a reputation of moving around.
