Via Undone Chocolate.
Last month, Young & Hungry reported that a chocolate factory, D.C.’s first, would be opening next summer.
Concept C will be located next to the DC Brau brewery and “specialize in bars made with cocoa beans from Brazil’s Amazon and Atlantic rainforests.” Colin and Sarah Hartman, who are opening the factory, said that it will be “a delicious and impactful project coming soon,” and, yes, you’ll be able live out all your Willy Wonka fantasies as there will be tours and tastings.
However, it looks like Concept C won’t, in fact, be the District’s first chocolate factory. Undone Chocolate, a “small batch bean to bar craft chocolate company,” which is housed in Union Kitchen, has just launched and is claiming to be the city’s “first local craft chocolate factory.”
According to a release, the Undone Chocolate factory, which was cofounded by Adam and Kristen Kavalier, “roasts and grinds organic dark chocolate from cocoa beans sourced directly from small producers in Central & South America, and the Caribbean.”
And the Kavaliers are adamant that Undone is the city’s first chocolate factory:
As the District’s FIRST craft chocolate makers, they are excited to teach the local community about how chocolate is made and where it comes from. They will be teaching classes on how to make chocolate from scratch and organizing tasting events, including pairings with wine and cheese, all starting this winter.
For now, Undone says it’s planning to grow their factory within Union Kitchen but has plans to build a standalone chocolate factory in D.C. within the next few years. Death by chocolate, ya’ll.
