It’s about to become a little easier to get a glimpse inside (and a taste) of José Andrés’ inventive culinary mind.
The prolific chef and his company, ThinkFoodGroup, have announced the ThinkFoodLab, (701 Pennsylvania Ave. NW) a temporary space that will house pop-ups as well as act as a location to research and develop new fast-casual ideas. If Andrés’ track record is any indication, there are likely going to be some exciting things coming out of this kitchen.
The new lab feels like a natural progression for Andrés and ThinkFoodGroup, who are behind some of D.C.’s most boundary-pushing food, including the two-Michelin starred Minibar (855 E St. NW). But he’s also made waves in the fast-casual space with his vegetable-centered Beefsteak restaurants.
“I always have so many ideas for new concepts going through my head, and it has been a dream of my team and mine to have a space to try them all out in a way that the public can experience,” Andrés wrote in a statement.
ThinkFoodLab will kick off by featuring a pop-up version of Pepe, Andrés’ Spanish food truck. So get ready to dig in to sandwiches like the pollo frito—fried chicken breast with lettuce, piparra peppers, aioli, and spicy bravas sauce—as well as the Spanish grilled cheese with manchego, Murcia, Valdeón, and fresh goat cheese and a hit of membrillo.
An opening date has not been announced, but hours will be 11 a.m. to 6 p.m once it’s up and running, likely in the coming weeks. Look for more details to emerge as it gets ready for businesses.
