This week’s revelation that the Saudi ambassador to the U.S. was targeted for assassination was big news — not only because of the links to Iran, but also because had it happened, it would have marked one of the few times in history that a foreign diplomat was killed while serving in Washington.

As the City Paper noted this morning, today is Mexican Independence Day, and plenty of Mexican joints around town are celebrating with special deals and great menus. But there’s also a lesser-known South American independence day taking place this weekend, and there’s now food to celebrate it.
