Hill Country Barbecue Market opened this past Saturday.

Texas barbecue acolytes can now rejoice. This past Saturday, New York’s Hill Country Barbecue Market opened in Penn Quarter. The restaurant smokes up barbecue modeled on that served at Kreuz Market in the Hill Country of Texas. And while some Texans might argue nothing will be quite the same as what they can get in Texas — especially when it’s being imported from New York — Hill Country hews as close as possible to the real thing.

Served sauceless without forks, the meat is coated with a dry rub of salt, pepper and a touch of cayenne and then smoked with Texas post oak. And during a check up visit, Kreuz Market owner Rick Schmidt said, it would “not be out of place in Texas.”

Upon entry, guests of the restaurant receive a meal ticket that enables them to move through counters of barbecue, side dishes, drinks and desserts. Much like in dim sum, your ticket will be marked to keep track of your orders and your final check. Be sure not to lose your ticket, or risk being charged $50.
