Following three sold-out pop-ups this summer, Bullfrog Bagels is scheduled to open next week on H Street NE.
What’s the story? The short answer appears on the shop’s Facebook page, which defines Bullfrog as the “answer to D.C.’s ‘good bagel’ prayers.” The bagelry’s modest mission: “To make New Yorkers pine for D.C. bagels.”
If that’s all you need to know, prepare to leapfrog to 1341 H St NE, where Bullfrog will open on or soon after September 16.
Photo courtesy Bullfrog.Bullfrog will be embedded in the eastern half of the Star and Shamrock pub and deli, where it will initially operate from 7 a.m. to 2 p.m. Tuesday through Sunday. The Star and Shamrock will remain open as normal seven days a week, including Mondays.
Bullfrog co-owner and master bagel maker Jeremiah Cohen debuted his “chewy but not too chewy” bagels at Cork Market in June. Judging by the brisk sales and long lines, Cohen is confident his top-secret recipe will bring the “long-suffering people of Washington the bagels they deserve.”
The hand-rolled “D.C. bagels” are made with tap water and a wild leavening agent that grows organically in the air.
“Our bagels taste like D.C.,” said Cohen, a lifelong Washingtonian and food industry veteran. “Like wine, they have a terrior that’s a combination of earthy and urban characteristics.”
Bullfrog also makes traditional bialys and classic fish preparations. Smoked salmon is house cured and offered neat (Scottish style) or pastrami crusted. Smoked whitefish salad is made from scratch daily.
“Bullfrog is inspired by the classic delicatessens and bagel shops of New York, as well as by the culinary renaissance happening right now in D.C.,” said Cohen.
Bagels come in everything, poppy, sesame, onion, salt and plain for $1.50. Bialys are $2 and bagel sandwiches cost between $6 and $12.
Co-owner Abby Sexton will manage the H Street bagelry, the first storefront in a local chain of neighborhood shops Bullfrog envisions throughout D.C.
“We see Bullfrog as a kindred spirit and we’re happy to collaborate with them,” said Mark Menard, co-owner of the Star and Shamrock. “What Bullfrog brings to the Star and Shamrock is exactly what we would have done when we opened four years ago if we knew Bullfrog then.
“Together, we’re going to integrate and innovate,” said Menard. “Bullfrog is like another star in our shamrock.”
